This is a stunning Cookie I don't know how you manage to keep producing the most beautiful cookies I've ever seen 😍 I'm guessing large eggs? Thank you 😊

The grams of sugar for the jam batch says 50g in the recipe but 25g in the ingredients list

Deepika Kalla-Paul's avatar

25grams is the correct amount! sorry about that! I've updated it!

The cookies look delicious and I plan to make them for valentines day. I did notice a little mistakes in the recipe. For the crumble the ingredients ask for 20 gr of egg and it's says that is the equivalent of one egg and one egg yolk, but that would be way too much egg.

Looking forward to making them :)

Hi for the crumble - I've clarified the instructions. You will need to beat 1 whole egg and 1 egg yolk and then use only 1.5 tbsp (20 grams) of that egg mixture into the crumble batter!

So stunning! Going to make these for galentines! Can the almond flour be substituted at all for allergies?

Deepika Kalla-Paul's avatar

Thank you!! :) Unfortunately the almond flour is necessary for that crumbly texture. I tried a few versions with just ap flour and they were more crunchy. If you don’t mind that texture you could give it a try though!

Hi again Deepika! I wanted to confirm if you bake the cookies at 375 as well? It says 375 for the crumble, but I didn’t see a temperature for the cookies themselves. Thanks!

Hi! The actual cookies should be baked at 350! Sorry, the recipe has been updated to note that.

These are amazing!! I made them and the recipe is perfect! Everyone who ate them thought of the Good Humor Bars. Thanks for sharing your creativity! I want to try to make a Chocolate eclair version ( I think that was the shortcake counter part ice cream bar) and see if I can get close to that one too :-)

If I decide to not use pink food coloring, do I still need separate the dough?

Deepika Kalla-Paul's avatar

the dough is separated into two to create a strawberry and a vanilla dough. If you wanted you could skip separating the dough and just add the strawberry powder directly into the dough to create just one pink light strawberry cookie dough. I still prefer to split the dough to get the two different cookie flavors in each bite!

Yess ughh so unfortunate! I'm not sure who they are even marketing to these days...Makes me want to start my own company that recreates the childhood classics the original way! haha. yess malted milk powder is amazing at re-creating that boxed/packaged flavor!
